2 sticks pie crust mix
4 eggs
11/2tsp. grated lemon rind
1 tbsp. flour
1/8 tsp. cream of tarter
1/4 c. sugar
1c. sugar
2 egg whites(room temp)
3 tbsp. sugar

Directions:
Directions:
Preheat oven to 350. Blend crust mix,1/4c. sugar, and 1 of the eggs. Pat evenly into a greased 9x13 pan. Bake for 10 minutes remove to wire rack, leave oven on. Beat remaining 3 eggs, and 1c. sugar until light and fluffy. Beat lemon rind, lemon juice and flour. pour over pie crust. Bake 15 minutes longet beat egg whites with cream of tarter until frothy. Beat in 3tbsp. sugar, 1 at a time until meringue forms stiff peaks. Remove pan from oven. Raise oven temp to 450. Spread meringue over lemon mixture. Return to oven and bake 5 minutes or until golden brown. Cool on rack, cut into bars with wet knife. (These bars are new to me. Kind of like lemon pie. Copied from a magazine on trip to Portland, Oregon)
