Marinade:
1/4 cup each brown sugar and ketchup
3 Tbsp balsamic vinegr
2 Tbsp olive oil
1 Tbsp reduced sodium soy sauce
2 tsp minced garlic
1 tsp each curry powder, ground coriander and ground ginger
1/2 tsp each salt and ground pepper

1 boneless pork loin roast (about 4 lbs)

Marinate roast overnight in refrigerator. Preheat oven to 325บ F. Roast pork uncovered for about 1 3/4 -2 hours. Should be 155 บ F in center of roast. Pour reserved marinade into a saucepan. Bring to a boil, reduce heat and simmer for 1 min. Brush roast generously with marinade during the last 20 min of cooking time. Remove from oven, cover loosely with foil and let rest for 10 min before slicing. Slice thinly and serve.
