large thick pork chops (one per person)
1 jar of salad artichokes (drained but save the oil and don't nuke the artichokes)
a few baby carrots
a few quartered (lengthwise) peeled potatoes
1 medium sweet onion quartered
salt pepper, garlic

Directions:
Directions:
Nuke the vegetables (except the artichokes )until softened on the outside while you saute the seasoned pork chops in a tiny bit of the artichoke oil. Place them aside . Saute the vegetables in all that good pork chop drip until nice and brown. Place the veggies in a cassserole dish with the pork chops on top. 350 for 1 hour.
