1 cut up chicken
2 Tbs. olive oil
salt, pepper, garlic to taste
1pg. yellow rice (Vigo brand)
1 sm. jar sliced pimentos
1 sm can sliced black olives
1 cup fresh mushrooms
1c fresh or frozen green peas

Directions:
Directions:
Brown chicken in olive oil and bake in pyrex pan 1 hr at 350. Cook yellow rice until tender as directed on package. Toss in olives, mushrooms, pimentos, frozen peas. Note: lf the rice is nice and hot, it will cook the mushrooms and peas as much as they need while you are assembling your dinner guests. Place the rice mixture on a platter and arrange the chicken pieces on top. Pour the juices over the chicken and rice.

Note: Cook the rice and THEN add the other things. The pimentos have a tendency to bleed color onto the rice in an unsightly way and the peas will get mushy if you try to cook everything together. The idea is to have lots of bright colors, yellow, red, green, all bright and tender.
