3 Tbsp cooking oil 1 ½ lbs lean pork sausage 4-5 Spring onions with tops ½ cup fresh sliced mushrooms 1 large Green Pepper 1 Medium Celery bunch (cut-up in small pieces) 2 pkg dry chicken noodle soup mix 1 cup brown rice – uncooked 1 can sliced and drained water chestnuts ¼ cup slivered almonds Salt and pepper
Cook the dry chicken noodle soup mix in 4 ½ cups boiling water for 7 minutes. Cook sausage in skillet and drain off fat Saute onions, green pepper, celery pieces in the cooking oil. Add soup, rice and chestnuts. Mix together thoroughly Bake in 350 degree oven in a covered dish 1 ½ to 2 hours. The last 30 minutes of cooking remove cover and sprinkle with almonds.
