1/2 CUP OLIVE OIL
1/4 CUP FRESH LIME JUICE
1/4 CUP TEQUILA
2 SHALLOTS, CHOPPED
2 GARLIC CLOVES, MINCED
1 TEASPOON SALT
1 TEASPOON GROUND CUMIN
1/2 TEASPOON PEPPER

Directions:
PEEL SHRIMP, LEAVING TAILS INTACT; DEVEIN, IF DESIRED. COMBINE OIL AND REMAINING 7 INGREDIENTS IN A BOWL; STIR IN SHRIMP. COVER; CHILL 1 HOUR. REMOVE SHRIMP FROM MARINADE, DISCARDING MARINADE. THREAD 9 SHRIMP ON EACH OF 6 (12 INCH) METAL SKEWERS. (THREAD TAIL & NECK OF EACH SHRIMP ONTO SKEWERS SO SHRIMP WILL LIE FLAT)
