1 c red onion
2 tsp chilli powder
1 tsp ground cumin
3 c corn kernels
1 red bell pepper, diced
1 green bell pepper, diced
1 to 1/2 c peeled, seeded and diced tomatoes
1/4 c chopped cilantro
3 tbsp sherry vinegar or applecider vinegar
2 tbsp Olive oil
Salt and Pepper to taste

Mix seasonings, corn, peppers, tomato and cilantro in a bowl. Stir together oil and vinegar and pour over veggie mixture. Add salt and pepper. Chill before serving.
