7 oz. package yellow rice
1 can chicken broth
1/2 green pepper chopped
4 green onions chopped
1/3 c. mayonnaise
12 - 24 stuffed olives
2 6oz. jars marinated artichokes save the liquid
1/2 tsp. curry powder
8 half chicken breasts cooked and diced

Directions:
Directions:
Cook rice using chicken broth as part of the water required by directions and omitting the salt. Cool. Add onion, pepper, olives. Drain artichokes and chop into small pieces. Add to mixture. Add chopped chicken. In a small bowl mix mayo with curry and the liquid from one of the artichoke jars. Pour over rice mixture and stir until coated. If it seems dry add some or all of the remaining artichoke liquid. Chill overnight.
