2mls salt,12mls capers(chopped fine),6mls red wine vinegar,25mls dry red wine,6mls cracked black pepper,40mls lemon juice,4-5 anchovie fillets(chopped fine)(optional) few drops tabasco,few drops of lea and perrins,20mls of dijon mustard,12 mls garlic, 1liter mayonaise.

mix all ingredients together then add to the one liter of mayonaise.
