2 C. Unsalted Butter, at room temperature
1 C. Powdered Sugar
1 T. Vanilla Extract
4 C. Flour
1 t. Salt
1 ½ C. Maraschino Cherries, chopped and drained on paper towels (16 oz. jar)
1 ⅓ C. Chocolate Chips

Directions:

Preheat oven to 325º.

In a bowl, combine the Flour and Salt. Set aside.

In a mixing bowl, cream the softened Butter with 1 C. of Powdered Sugar. Blend in the Vanilla.

Blend in the Flour mixture. Batter will be stiff.

Mix in the Cherries and Chocolate Chips.

Roll the dough into balls and place them 2" apart on cookie sheets. Flatten the dough balls, slightly.

Bake the cookies 10-15 minutes, or just until they turn a light brown around the edge.

Let the cookies cool about 5 minutes on the baking sheet before removing them to a rack to cool completely.

Cookie dough can be formed into logs, chilled, then sliced and baked, if desired.
