1 1/2 lb tender yellow squash
1/2 cup oleo
1/2 cup chopped onion
1/4 cup chopped green pepper
1/2 cup mayonnaise
1/2 cup shredded cheese
1 egg
1 tsp sugar
1/4 tsp black pepper
*Bread crumbs
1 tbsp oleo

Directions:
Directions:
Cook sliced squash in small amount of water for 8 minutes. Drain. Saute onion and green pepper in oleo. Add squash and mayonnaise. Stir in cheese. Beat egg and sugar together and add to mixture. Blend well. Pour into 1 qt casserole and top with buttered bread crumbs. Bake at 350 degrees for 30 minutes.

*Bread Crumbs - process 2 slices of bread in food processor. Combine with 1 tbsp oleo.
