2/3 c macadamia nuts
1/2 c sugar
1/2 c packed light brown sugar
1 tsp vanilla
1 large egg
1 1/4 c all purpose flour
1/2 tsp baking soda
1/4 tsp salt
1/8 tsp ground nutmeg
1/2 c sweetened dried cranberries, chopped

Place nuts in a food processor and process into a smooth paste, scraping sides of bowl once. Combine nut paste, 1/2 c sugar, and the brown sugar in a bowl. Beat with a mixer at medium speed. Add vanilla and egg, beat well.

Wisk together the flour, soda, salt, and nutmeg. Add to sugar mixture, beat at low speed until combined. Mixture will be very thick. Stir in chopped cranberries. Chill for 10 minutes.

Divide chilled dough into 30 equal portions; roll each into a ball; or just use a cookie baller. Put the 1 T of sugar into a bowl. Press each dough ball into the sugar and place on cookie sheet, sugar side up.

Use a fork and press the top of each cookie with the tynes, dip fork in water and press the tynes the other direction for a crisscross pattern. Place 15 cookies on each cookie sheet, lined with parchment paper.

Bake cookies, one sheet at a time, at 350º, for softer cookies, or 375º for crispier cookies, for 8-9 minutes, until golden. Remove cookies from pan and cool on a rack.
