Cake:
6 eggs (room temperature)
1 1/4 cups sugar
1 1/4 cup cake flour
2 1/2 tsp baking powder
1/4 tsp salt
1 tsp vanilla

Lemon Pudding:
2 cups water
1 cup sugar
5 tbsps cornstarch
1/4 tsp salt
3 egg yolks, beaten slightly
2 tbsps butter or margarine
5 tbsps lemon juice

Butter Frosting:
1/3 cup softened butter or margarine
Pinch of salt
3 cups sifted powdered sugar
1/4 cup evaporated milk
1 1/2 tsps vanilla

Cake:
Beat eggs until thick and lemon colored. Beat in sugar a little at a time. Combine flour, baking powder and salt and fold into the egg mixture. Add vanilla and pour into jelly roll pan which has been greased, lined with waxed paper, and greased and floured again. Bake at 425 degrees F until it springs back when lightly touched. Turn out on cup towel; peel off waxed paper. Spread with cooled pudding and roll beginning on long side, leaving wrapped in towel until cool. Ice with Butter Frosting, if desired.

Pudding:
Heat water. Combine cornstarch, sugar, and salt. Stir a little heated water into cornstarch, sugar mixture and stir back into remaining heated water. Cook until thickened. Stir a little of mixture into egg yolks and add back to pudding mixture. Cook additional 1 - 2 minutes. Remove from heat and add butter or margarine and lemon juice. Cool.

Butter Frosting:
Cream butter or margarine. Add salt and 1 cup powdered sugar. Beat until light and fluffy. Add remaining powdered sugar and milk alternately, blending until smooth and of spreading consistency. Add vanilla. Spread on lemon roll and sprinkle with coconut if desired.
