6 to 8 lb well trimmed beef roast
6 large garlic gloves
1-2 teaspoons cracked black pepper
2 teaspoons dried thyme leaves

Directions:
Directions:
Allow roast to stand at room temperature about an hour before roasting. Heat oven to 325 degrees. Combine garlic, thyme, black pepper in a small bowl. Place roast, fat side up on a rack in shallow roasting pan. With you hands, press seasoning evenly into surface of beef. Do not add water tot eh pan and do not cover pan. Roast 325 15 minutes per pound. Take out when meat thermometer reads 125, let stand 30 minutes. Temperature will continue to rise.
