8 Celery Ribs
4 1/2 lb Standing Rib Roast
1 tbsp Kosher Salt
1 1/2 tsp coarse black pepper
1/4 c diced onions
2 tsp garlic
1 (14 0z) can Beef Broth
16 oz whole fresh mushrooms

Directions:
Directions:
Preheat oven to 275. Coat 9 x 13 pan with cooking spray. Lay roast across celery ribs in center of dish. Sprinkle top of roast with salt pepper, onions and garlic
Pour broth and mushrooms into pan around roast. Bake 2 1/2 hours or until internal temperature reaches 145 medium rare up to 170 well done.
