8 oz. elbow macaroni or ziti
1 pound ground lamb or beef
1/2 cup chopped onion
1 clove garlic, minced
1 15oz can tomato sauce
1/2 tsp. dried oregano
1/2 tsp. ground cinnamon
1/4 tsp. pepper
3/4 cup grated Parmesan cheese
2 Tbs. butter
2 Tbs. flour
1/8 tsp pepper
1 1/2 cups milk
1 beaten egg
1/4 cup grated Parmesan cheese

Cook pasta according to package. Drain well. Meanwhile in a large skillet cook meat, onion and garlic untill the meat is brown. Drain fat from skillet. Stir in tomato sauce, oregano, cinnamon and pepper. Cook uncovered, about 5 min. Remove from heat. Stir in cheese (3/4 cup). Layer half the pasta in an 8X8x2 inch baking dish. Top with the meat mixture, then the remaining pasta. For the sauce, in a saucepan melt the butter. Stir in flour and pepper until blended. Add milk all at once. Cook and stir over medium heat untill mixture is thickened and bubbly. Stir some of the mixture into the beaten egg. return egg mixture to saucepan. Cook and stir for 2 min. more. Stir in Parmesan cheese (1/4 cup). Pour sauce over the pasta layer. Bake, uncovered, in a 350 degree oven about 35 min. Sprinkle with additional Parmesan cheese. Let stand 10 min. before serving
