4 c. cooked diced chicken
1 onion chopped 1 green pepper chopped
1 4 oz. can diced green chilies
2 c. shredded monterey jack cheese
3 T. margarine
3 T. flour 1 t. ground coriander
2 c. chicken broth
1 c. sour cream

Directions:
Directions:
Saute onion and green pepper until tender, put in bowl with chicken and chilies, set aside. In sauce pan melt margarine, add flour to thicken, add chicken broth, coriander, salt and pepper. Stir in 1/2 c. cheese and all sour cream. Put 1 c. of sauce mixture into chicken mixture. Pour 1/2 c. sauce on bottom of 9 x 13 pan. Put mixture and a little cheese onto torilla, roll and place in pan. Put remaining sauce and cheese on top of enchiladas, bake uncovered for 25 minutes at 350 degrees.
