1 12 oz. package (2 cups) of Semi Sweet Chocolate Chips
2 tablespoon instant coffee
2 teaspoon boiling water
1 ¼ cups flour
¾ teaspoon baking soda
½ teaspoon salt
½ cup butter or margarine (softened)
½ cup sugar
½ cup firmly packed brown sugar
1 egg
½ cup chopped walnuts (optional)

Preheat oven to 350 degrees

Melt over hot (not boiling) water: ½ cup semi sweet chips. Stir until smooth. Cool to room temperature. In a small cup, dissolve instant coffee in boiling water. Set aside.
In a small bowl, combine flour, baking soda and salt. Set aside.

In a large bowl, combine butter or margarine, sugar, brown sugar. Beat until creamy. Add dissolved instant coffee. Add egg and melted chocolate chips. Mix well. Gradually add flour mixture into large bowl. Mix well.

Stir in remaining chocolate chips and nuts if desired. Drop by rounded tablespoon onto ungreased cookie sheets placing about 3 on each row as cookies will spread.

Bake at 350 degrees for 10-12 minutes. Allow to stand 2-3 minutes before removing from cookie sheet. Cool completely.

Yield: About 24 3 inch cookies
