2 c. dry oats (I like 1 old fashioned oatmeal and 1 quick cooking)
½ cup peanut butter
½ cup honey
½ cup dry roasted peanuts, optional
½ cup mini M&M’s
½ cup mini chocolate chips
1 teaspoon vanilla, optional
dash of salt

Directions:

In a medium bowl, add all of the ingredients and stir to combine well. The mixture should be a bit sticky. Refrigerate for at least 30 minutes. Use a spoon to scoop about a tablespoon of the cookie ball mixture into your hand. Roll into a ball. Repeat with remaining mixture. Store the balls covered in the fridge for up to a week, or in the freezer for much longer.

This is Addison's favorite recipe, however, you can make a lot of variations. Start with the oats, honey and peanut butter and try some of these other options: pretzels, butterscotch chips, cocoa powder, raisins, pecans, coconut, dried fruit, different varieties of chopped nuts. Almond butter can also be substituted for the peanut butter.
