Ricotta Cheese Cookies Recipe

2 c. sugar
1 c. butter, softened
15 oz. container of ricotta cheese
2 tsp. vanilla
2 eggs
4 c. flour
2 T. baking powder
1 tsp. salt

Frosting:
1 1/2 c. powdered sugar
3 T. milk
Optional: food coloring and sprinkles

Directions:
Directions:
Preheat oven to 350º. Beat the sugar and butter at low speed until blended. Increase speed to high and beat until light and fluffy, about 5 minutes. Add ricotta, vanilla and eggs, and beat at medium speed until combined. Reduce speed to low. Add flour, baking powder and salt, and beat just until dough forms. Don't over beat. Drop dough by tablespoons, about 2 inches apart on ungreased cookie sheet. Bake about 13-15 minutes or until cookies are very lightly golden brown.

Frosting: In a small bowl, whisk powdered sugar and milk until smooth With a small spatula or knife, spread icing on cookies and top with your favorite sprinkles.

These cookies are a must-have at any family holiday event! Make sure to set up a "Decoration Station" if you're using sprinkles, the art of cookie decorating is serious (and messy) business. CAUTION: If Uncle Bill is in vicinity you may want to take extra precautions to safely store your cookies until it is officially time to bring them out. ENJOY!
