½ C Butter
¾ C Brown sugar
1 Egg
1¼ C Flour
½ tsp Soda
½ tsp Vanilla
½ tsp Salt
1½ C Candied fruit - I like using pineapple and green & red cherries
1½ C Nuts - I like to mix pecans and walnuts and not chopped too fine
Dates - Optional but about 1 cup works

Preheat oven to 300º

Sprinkle approximately ¼ cup of the flour over the candied fruit to keep it from sticking when adding to batter.

Cream butter and sugar. Add egg and mix well.

Mix in the dry ingredients and then the fruit and nuts.

Drop by teaspoonful on parchment lined or lightly greased baking sheet.

Bake for 20 minutes until golden. Cool for a few minutes before removing to a cooling rack.

This was one of my Mom's favorites and we always had it in the house at Christmas time. She didn't bake fruitcake but always did these cookies.
