6 med. peaches
3/4 c. sugar
3/4 tsp. cinnamon
3 egg yolks
2/3 c. heavy cream

Directions:
Directions:
Arrange peaches in pie crust, cut side up. Mix sugar and cinnamon; sprinkle over fruit. Bake 15 minutes in 400 oven. Blend egg yolks and cream together. Pour over fruit after the 15 minutes baking. Let cream mixture run into fruit and bake 30 minutes more. Cool 1 hour before serving.
