1 lb. butter or margarine, softened
2 c. sugar
8 c. sifted all purpose flour
6 eggs, beaten
1/4 tsp. baking soda
1/4 tsp. salt
1/2 tsp. grated lemon rind (opt.)

Directions:
Directions:
Cream butter and sugar until creamy; add beaten eggs. Sift together soda, salt, and 1 cup of flour. Add to butter mixture and blend well. Add remaining flour about 1 cup at a time, blending well after each addition. Chill dough for about 4 hours or cover and chill overnight, Pinch off and take a small amount at a time; roll out to 1/2" thickness and cut with shaped cookie cutters. Bake 350 degrees until lightly browned.

Icing:
Beat 1 egg white until stiff; add sifted powdered sugar until desired consistency. Put in separate cups and add food coloring. Paint on cookies as desired.
