Whole fryer chicken
1 large onion

1 tsp salt
2 tsp paprika
tsp cayenne pepper
tsp black pepper
tsp white pepper
tsp onion powder
tsp garlic powder
tsp thyme

Day before using Mix all dry ingredients well in a small bowl. Rub well all over skin of the chicken. Any extra dump into the chicken cavity. Store overnight in a zip lock bag in refrigerator.

To roast: line pan with foil and brush with olive oil. Put whole onion in chicken cavity and roast, uncovered for 4 hours at 250. Can turn a couple of times during roasting.
