6 large potatos
2 medium onions
5 TBSP bacon grease
1 TBSP salt
1 TBSP pepper
½ TBSP garlic powder
1 TBSP Old Bay seasoning – This is a must!

Directions:
After you have gathered all of the ingredients, throw everybody out of the kitchen. This can be done by asking for help in diceing the potatos and onions. They will run! Trust me, I have seen this. The dog can stay, you’ll need someone to pick-up what you drop on the floor, this too will happen!
Dice the potatos and onions into ½” cubes. Mix all of the ingredients in a large bowl. Next, dump the bowl into a large pan, that’s right I said dump! A cast iron pan works best, but use what you have. Besides, after all the mixing and sraping those nice “non-stick” teflon pans will be down to metal anyway. Cook over a low to medium heat with the pan covered loosely. Remember to stir once in a while. You’ll know its done when the potatos start sticking to the bottom of the pan and you start getting “that lovely golden crust” in the bottom of the pan. Don’t let that “lovely crust” go to waste, keep scraping it off the bottom and mix it through the potatos. In my opinion, that’s what makes the dish.

Best if served with fried eggs, scrapple or bacon and toast along with orange juice and ice tea. Now that’s living! What a way to start the day!
