1 lb. almond paste at room temp.
2 c sugar
4 egg whites
1 lb. pignoli nuts

Directions:
Directions:
Cream almond paste and sugar with hands till it looks like coarse sand. Fold in well beaten egg whites. Chill for 1 hour. Roll into ½ t size balls and roll in nuts.
Bake at 350º for 15 minutes or until brown on the bottom on well greased cookie sheets
Cool completely before removing from pan.
