⅓ c butter
⅓ c sugar
1 egg
⅔ c light honey
2 tsp lemon flavoring
2 T fresh lemon juice
1 tsp grated lemon rind

1¾ unbleached white flour
1 c whole wheat pastry flour
1 tsp baking soda
1 tsp salt

Directions:
Directions:
Cream together butter, sugar, egg, honey, lemon flavoring, juice and rind. Mix flour, soda and salt together and add to butter mixture. Chill dough. Roll out ¼ inch thick and cut into desired shapes. Place 1 inch apart on greased baking sheet or use parchment paper. Bake at 375ºF for 8 to 10 minutes. Yield: about 5 dozen cookies.
