Beets(fresh)
5 C vinegar
7 C sugar

Directions:
Directions:
Wash beets and boil until fork tender. Reserve water, let it
settle, then skim. Peel and slice beets. Put vinegar and sugar in
large pot and bring to boil. Add beets and some of the leftover
water until they are well covered in the pot. Boil for 3 to 4
minutes, turn off fire, and let stand for 5 minutes. Put into jars and
seal.
