3 C shortening
3/4 C sugar
1 egg
1 C carrots, cooked and mashed
2 C flour
2 tsp baking powder
1/2 tsp salt
1 tsp vanilla
1/2 tsp lemon extract


ICING:
1 C 10X
Grated orange
Orange juice to moisten
Directions:
Directions:
Cookies: Preheat oven @ 350º
Cream shortening and sugar. Add eggs and carrots and mix well. Add flour, baking powder and salt. Mix well and add vanilla and lemon. Blend well. Place spoonful of mix about 2 inches apart on cookie sheet. Bake on ungreased cookie sheet for 15 to 20 minutes.


While cookies are still warm mix all icing ingredients together and spoon over cookies. Its like a glaze.
