4 cups shredded cheese.
(4 cups is about 1 pound)
1 cube softened butter or margarine
1 ˝ - 2 cups flour
Salt for tops

Directions:
Directions:
Mix cheese and butter together with your hands. As you mix the cheese will soften from the warmth of your hands. Add enough flour to make consistency of soft pie dough. (You’re going to wonder how in the world am I going to mix flour into this, but it will go. You do not need to add water. ) Keep mixing until you have a soft dough. Break off pieces a little larger than a pea. On cookie sheet covered with parchment, press each ball into a wafer thin circle. Sprinkle salt on top and bake at 350 degrees for 8 - 10 minutes. (Crackers should start to brown just a little around the edges. You can adjust your baking time as needed.) I used Colby/Jack cheese for the crackers I made Jan. I made some earlier using ˝ Sharp Cheddar and ˝ Italian Cheese Blend - it was a six cheese blend for a total of 7 cheeses. They were great. My sister in law uses Extra Sharp. Whatever cheese you use, I’m sure they’ll be great. You may even want to experiment with say garlic salt on top or Italian Seasoning added to the dough. Things like that. My sister in law also put chopped pecans on top before baking, sesame seeds may be good too. They are delicious warm too. Experiment and have fun.
