one pound ground beef
1/2 medium onion

1 Tb. salt
one cup rice (regular,long-grained)
one quart water
one stalk celery
1/2 Tb. chili powder (or taco seasoning)
meduim can of diced tomatoes
good dash of salt
dash of pepper

Directions:
Directions:
One pound ground beef; cooked and drained
then add, 1/2 medium onion; diced

Put in large pot and add all the rest of ingredients.
Simmer for about 30-45 minutes... stir often and add a little more water if needed.
Do not overcook the rice.
Let sit for 10 minutes with a lid on the pot before serving to "ripen"
*freezes well also
