1 cup butter (2 sticks)
1 cup white sugar
1 cup brown sugar

2 cups flour
2 ½ teaspoons baking powder
1 teaspoon soda

2 eggs
1 ½ teaspoons vanilla

3 cups quick oats
1 cup walnuts
1 cup coconut

Directions:
Directions:
Cream the first 3 ingredients. Add eggs and vanilla and continue to beat. Mix the flour, baking powder and soda together, and add to the creamed mixture (about ½ cup at a time).
Stir in the oats, walnuts and coconut.
Can drop the cookies and bake at 375 for 8 minutes.
Or put the dough in rolls wrapped in wax paper and refrigerate. Slice and bake at 375 for 8 minutes.

What I like to do is substitute the coconut for semi-sweet mini chocolate chips. This dough is fantastic!!!
