2 cups cooked spaghetti squash (see below)
3 tablespoons butter
3 tablespoons heavy cream
1/4 cup grated Parmesan cheese

To cook spaghetti squash:
Cut squash in half lengthwise and remove seeds. Pierce skin a few times with a sharp knife. Cover loosely with saran wrap and microwave until tender, about 7-8 minutes. Use a fork to remove the flesh of the squash, it shreds and looks like spaghetti!

To make Alfredo sauce:
In a saucepan melt butter, add cream. Gradually add cheese. Stir until smooth and toss with cooked squash. Top with salt, pepper and additional cheese.

Spaghetti squash is delicious and much healthier than pasta. This is fantastic! You can add shrimp, chicken, mushrooms or whatever else you like.
