4 cups pared, diced apples
2 cups sugar
1 cup oil
2 tsp. vanilla
3 eggs
3 cups flour
1 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon
1 cup raisins or nuts, optional

Directions:
Directions:
Combine apples, sugar, oil, vanilla and eggs. In separate bowl combine flour, salt, baking soda and cinnamon. Add nuts or raisins if desired. Add flour mixture to apple mixture and mix well. Batter will be stiff. Pour into greased, floured tube pan and bake at 350F for 1 hour or until done.
