1 c. instant mashed potatoes (prepare according to box)
1/2 c. water (115-120 degrees)
1 pkg. yeast
1/2 c. shortening
1 c. scalded milk
3 beaten eggs
3/4 c. sugar
2 tsp. salt
5 c. flour

Directions:
Directions:
Combine water and yeast , set aside for about 5 minutes. Place shortening in scalded milk. Stir until melted. Add the mashed potatoes, let cool until luke warm. Add yeast mixture, eggs, sugar, and salt. Beat well, add flour slowly. Knead. Raise until double, punch down. Leave in fridge in generously greased bowl, covered. Be sure to turn dough to coat all sides. About an hour and half before you are ready to eat take them out and shape into rolls and place in a 9x13 about 1/2" apart. Let rise an hour or so. Bake at 425 degrees for about 15 minutes.
