2 tbsp. canola oil
4 scallions, chopped
1 tsp. minced fresh ginger root
1 garlic clove, minced
3 c. cold cooked brown rice
3 c. frozen mixed vegetables
1 c. diced skinless roast turkey breast
2 large eggs, beaten
1 tbsp. reduced-sodium soy sauce

1.)Heat a large nonstick skillet or wok over high heat until a drop of water sizzles on it. Swirl in 1 tbsp. of the oil; then add the scallions, ginger, and garlic. Stir-fry until fragrant about 1 minute; transfer to a plate.
2.)Return the skillet to the heat and swirl in the remaining 1 tbsp. oil. Stir in the rice and toss gently to coat, separating the grains. Stir in the vegetables; stir-fry until tender, about 8 minutes. Add the turkey and heat through, about 1 minute.
3.)Push the mixture to the sides of the skillet to make a well in the center; pour the eggs into the well and cook, stirring, just until set 15-20 seconds. Add the reserved scallion mixture and the soy sauce; cook 1 minute more, tossing lightly to heat through.
