Whole Wheat Banana Bread Recipe

2 cups whole wheat flour
1 Tbsp. wheat germ
1 tsp. baking soda
1/2 tsp. salt
2 eggs
2 cups cut up ripe banana
1/2 cup honey
1/4 cup vegetable oil
1 Tbsp. lemon juice
1/2 tsp. vanilla extract
1 cup chopped walnuts

Measure flour, wheat germ, baking soda and salt into large bowl and stir to blend. In bowl of food processor, combine the eggs, banana, honey, vegetable oil, lemon juice and vanilla until well blended. Pour over flour mixture. Add walnuts. Stir with rubber spatula just until blended. Pour into a greased and floured 8 x 5 x 3 inch loaf pan. Bake at 350F until sides pull away from pan and pick inserted in center comes out clean, 45 to 55 minutes. Cool on rack before removing from pan.
