3 egg whites
2 cups powdered sugar
2 tsp. lemon rind
1 Tbsp. ground cinnamon
1/8 tsp. salt
8 oz. ground almonds or walnuts

Directions:
Directions:
In a small mixing bowl beat egg whites until soft peaks form. Increase to a higher speed and add powdered sugar, a little at a time until stiff and glossy. Set aside 1 cup of this mixture. Beat lemon rind, cinnamon, salt into remaining meringue mixture. Fold in nuts. Lightly flour work surface. Sprinkle with granulated sugar. Turn meringue with nuts onto work surface and spread out about 3/8 inch thick. Let stand uncovered for 30 minutes. Using floured rolling pin, roll out dough 1/4 inch thick. Cut out with floured star shaped cookie cutter. Re-flour each time. Arrange on cookie sheet. With back of spoon, spread the top of each cookie with a small amount of reserved meringue mixture. Bake at 275F for 14 to 16 minutes. Cool on rack. Store in an airtight tin.
