1/3 c. white wine vinegar (or another form of vinegar...can use more of this if desire more of an acidic taste)
2/3 c. olive oil
1 tsp. dry mustard
dash of salt
dash of pepper
dash of tobasco
2 tsp. finely chopped garlic (optional)

Directions:

Whisk all ingredients together until the dressing thickens (can use fork). Serve over spinach with heart of palm and bleu cheese crumbles.
