"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Mashed Turnips, by Vara Wallace, is from A Real Southern Comfort,

families or individuals create heirloom cookbook treasures.
4 1/2 lbs. turnips 1 1/2 cups thinly diced onions ( about 2 medium sized ones) 1/3 cup butter or margarine 1 1/2 tsp salt 1/4 teaspoon pepper
Peel turnips and dice them. Cook the turnips and onions in a small lightly salted, boiling water over moderate heat for 30 to 40 minutes, until fork tender. Drain thoroughly and mash. Stir in butter, salt and pepper. Place over low heat for 1 to 2 minutes to evaporate the excess moisture.
