1/4 c. chopped onion
1 clove garlic, chopped
1 tbsp. butter
2 tbsp. oil
4 boneless chicken breasts
1 tsp. salt
1/4 tsp. pepper
2 tbsp. chopped cilantro
1 tbsp. lemon juice

Directions:
Directions:
Combine onion and garlic in butter. Cook and stir over medium heat until onion is tender. Cut chicken breasts into 1 inch pieces. Add chicken, salt, and pepper to onions. Cook and stir over medium heat until chicken is done (about 5 minutes). Stir in cilantro and lemon juice. If you don't have fresh cilantro, use 1 tablespoon of dry. Serve over rice.
