6 medium carrots, cleaned and chopped
1 small onion chopped
1 bay leaf
2 tbsp butter or margarine
2 tsp sugar
1 tsp grated lemon rind
1 tbsp chopped parsley
3 cups chicken stock

Directions:
Directions:
Combine carrots, onion, bayleaf, lemon zest, chicken stock, sugar, and butter in a heavy pan with lid. Simmer slowly til tender. Keep lid on to create condension. Sprinkle with parsley and serve.
