1 cup shortening
2 eggs
2 cups flour
2 cups oatmeal
2 cups brown sugar
1 tsp. vanilla
½ baking soda
1 cup salted peanuts

Directions:
Directions:
Cream shortening and sugar. Add eggs, vanilla, and mix well. Sift flour, salt, and baking soda together and stir into first mixture. Stir in oatmeal and peanuts. Place 1½ tbsp. of dough for each cookie. Put 1'' apart and flatten with fork. Bake at 375ºF for 8 minutes.
