3/4 cup cottage cheese
2/3 cup plain yogurt
1 tbsp flour
2 tbsp brown sugar
1/4 tsp salt
1 egg
zest and juice of 1/2 lemon

Directions:
Directions:
Make a graphm cracker crust in 7 inch spring pan. Preheat oven to 350 degrees. Whizz cottage cheese in food processor until smooth. Whisk together cottage cheese, yogurt, flour, sugar, salt and eggs until well combined. Add zest and lemon juice and stir well. Pour batter into the prepared crust and bake for 30 to 40 minute, until just set. Let cool at least 30 minutes.

Cream cheese was not invented until the 20th century, so early Penn. Dutch bakers used cottage cheese in this recipe. They served it both warm and cold. I prefer chilled.
