1 cup unbleached whole almonds, toasted
2/3 cup sugar
1/2 cup milk
5 Tbsp. butter, melted
1/4 cup all-purpose flour
3 eggs
1 tsp vanilla
1/2 tsp ground cinnamon
1/4 tsp. ground nutmeg
2 ripe medium pears
2 Tbsp. sugar
Ice cream or whipped cream (optional)

1.)Preheat oven to 375F.Lightly coat a 10 inch-quiche dish with cooking spray, set aside. In a food processor combine almonds and the 2/3 cup sugar, cover and process until nuts are ground. Add milk, butter, flour, eggs, vanilla, cinnamon, salt, and nutmeg. Cover and process with several on & offs until combined. Pour the mixture into prepared quiche dish. Set aside.
2.) Core and quarter the pears. Place pear quarters, skin side up, on a cutting board. Slice thin, cutting from bottom end almost to but not through, the stem end and do not seperate slices. Arrange pears in nut mixture, fanning slices slightly. Sprinkle with the remaining 2 tablespoons sugar.
3.) Bake for 45 to 50 minutes or until surface is puffed and browned. If edges brown faster than center cover edge with foil for the las 10 minues to prevent over browning. Loosen edges, serve warm or cool with ice cream or whipped cream if desired.
