1 Pound of unsalted Butter
2 Egg Yolks
1/4 Cup Powdered Sugar
1 Shot of Brandy
1 Teaspoon Baking Powder
4 Cups Flour (regular or cake flour)
˝ Cup Almonds (blanched, toasted & chopped), Optional
1 Box/Bag Powdered Sugar for coating

Directions:
Directions:
Cream softened butter well, add egg yolks, whiskey, sugar and continue beating. Add the flour and baking powder slowly. When dough is firm and smooth and doesn’t stick to your hands – add nuts. Kneed thoroughly into a ball.

Pinch off a small amount of dough (1 heaping tablespoon) and roll in palm of hand into desired shape – usually round or half-moon shape. You may also roll like pie dough and cut in desired shaped with cookie cutters. Place on cookie sheet covered in parchment paper or wax paper and bake at 350 degrees for 30 minutes.

Carefully remove from cookie sheet while still warm and place on paper that has been sprinkled with powdered sugar. Sift powdered sugar on top until cookies are well coated. Let cool and place in cupcake holders.

These cookies are a tradition among the Greek people and are served at most weddings, baptisms and special celebrations. The Kourabiethes are always served as a good luck token.
