3-4 lbs. country style pork ribs
1/2 cup mild soy sauce
1/3 cup catsup
1 tsp. dry mustard
2 Tbsp. brown sugar, packed
1 clove garlic, minced or pressed
1/4 tsp. black pepper
1 tsp. chili powder
few dashes hot pepper sauce
cayenne pepper, optional
2 oranges, unpeeled, thinly sliced
celery leaves for garnish

Cut off excess fat from ribs. Brown ribs. Place them in a roasting pan. Combine soy sauce, catsup, mustard, brown sugar, garlic, black pepper, chili powder, hot pepper sauce and cayenne. Pour sauce over ribs, turning once to coat evenly. Cover with foil and bake at 325F for 45-50 minutes. Uncover. Spoon sauce over ribs. Leave uncovered and bake 45-50 minutes longer until the ribs are tender, a rich brown and begin to crisp. Serve on a large platter, spooning extra sauce over ribs. Garnish with orange slices and celery leaves, if desired.
