1 cup shortening
¾ cup sugar
1 egg
1 cup cooked mashed carrots
2 cups flour
1 teaspoon baking power
½ teaspoon salt
1 teaspoon vanilla
1 teaspoon lemon extract

Directions:
Directions:
1. Cream shortening and sugar.
2. Add other ingredients and mix.
3. Drop by spoonfuls on baking sheet, or press into pan for bars.
4. Bake at 350º. (No time given.)
5. Frost while hot with icing made with powdered sugar and orange.
