Sift flour and salt. Add eggs, one at a time, beating thoroughly. Gradually add milk, mixing until blended. Add melted butter or oil and beat until smooth.
Let batter stand for 1 hr before cooking crepes.
Spray 6 inch crepe pan (or any 6 inch fry pan)
Pour in just enough batter to cover pan with very thin layer - tilt pan to spread batter evenly
Cook to a light brown on one side, then set on cloth with cooked side on the bottom.
Continue until all batter is used.
[if crepe batter seems too thick, beat in about 1 Tbsp water]
Cut turkey into bite size pieces
Chop green onions
Add turkey, green onions, stuffing, garlic, basil salt and pepper to gravy in saucepan on stove.
Simmer mixture uncovered for 5 mins.
Using slotted spoon, spoon onto middle of crepes - roll crepes, put into baking dish - pour remaining gravy over top.
Bake at 375 F [about 15 or 20 mins]
