1/2 c. sugar
1/2 c. apple cider vinegar
1/4 c. canola oil
1 (15oz) can peas
1 (15oz) white corn
1 (15oz) green beans
1 med. diced onion
1 med. dice green bell pepper
1-3 stalks celery, (your taste, optional)
1 jar pimento's, optional

Mix together, oil, vinegar and sugar in saucepan and boil for 3 minutes. Take of heat and cool. In large bowl, mix together all other ingredients that are left. Pour oil, vinegar, sugar mixture over vegetables, place in refrigerator preferably over night.

For sugar you can substitute the sugar with Splenda sugar, cup for cup.
